Mangalitsa Pork (Wagyu/Kobe)

Mangalitsa is considered the Kobe beef of the pork world. It is highly sought after and among the tastiest pork in the world.

The breed originates in hungary and is one of the oldest breeds in existance, it is quite rare and takes 3 times longer than a traditional or even a heritage pig to grow to full size. The meat of the Mangalica pig is reddish, highly marbled with creamy white fat, and is high in omega-3 fatty acids and natural antioxidants. Mangalica lard is lighter and melts at a lower temperature than lard from other pigs, this because it contains more unsaturated fats. So do not over cook it if you want to keep all that flavor!
