Mangalitsa pork is a luscious red, more akin to beef than pork. It's 50-percent fat content gives it a coveted marble and buttery flavor. Mangalitsa's take more than a year to fully develop, and they require outdoor space to roam freely, in order to strengthen their muscles (which further aids marbling).
